DOUBLE CHOCOLATE MUFFINS
Recipe adapted from Nikki Sharp's book
Ingredients:
3 eggs
1 can (15 ounces) red kidney beans,, drained and rinsed
3 tablespoons coconut oil, plus some for greasing
1/4 teaspoon vanilla extract
1/2 cup raw cacao powder
1/2 cup honey or maple syrup
1/2 teaspoon baking powder
Directions:
1. Preheat oven to 350 degrees
2. Place all ingredients in a blender or food processor and blend on low, scraping sides as necessary until combined
3. Lightly coat a muffin tin with coconut oil. Pour mixture into cups, filling each halfway
4. Bake for 20 minutes. The inside should still be slightly gooey (use a toothpick or knife to check). Let rest a few minutes before removing from the tin. Cool completely. wrap each muffin tightly to freeze.
